Black bean mousse

Ingredients
- 400 gr Black beans, drained and rinsed
- 50 gr Pitted dates
- 2 tbsp Coconut oil
- 8 tbsp Maple syrup
- 5 tbsp Cacao powder
- 4 tbsp Milk
- 1 pcs Organic orange
- 1 tsp Cacao nibs
Method
- Soak the dates for an hour in warm water
- Put the black beans and dates in a food processor and blend on high for a minute.
- Add the coconut oil, brown rice syrup, cacao powder, and milk, and blend again for another minute.
- Finally, stir in the orange zest.
- Spoon the mixture into espresso cups, sprinkle with cacao nibs, and a little extra orange zest.
- Chill in the refrigerator until ready to serve.
