Blueberry cheesecake

Ingredients
- 150 gr Whole grain biscuits
- 70 gr Salted butter
- 150 gr Sugar
- 400 gr Cream cheese
- 200 gr Quark (full-fat)
- 3 pcs Egg
- 1 pcs Lime
- 150 gr Blueberries
Method
Full-fat quark is hard to find. Feel free to substitute with low-fat and add some freshly whipped cream.
- Preheat oven at 175 degrees Celsius
- Cover bottom of cake pan with baking parchment
- Crumble the biscuits
- Melt the butter with 25 grams of sugar
- Mix butter and crumbs and cover bottom of cake pan.
- Put in the fridge to stiffen up for 20 minutes
- Mix cream cheese, quark and sugar in large mixing bowl
- Add eggs one at a time, keep mixing until sugar is dissolved
- Juice the lime and add to mixing bowl
- Add the blueberries
- Divide the mixture inside the cake pan
- Bake in center of preheated oven for 40 minutes
- Lower temperature to 100 degrees celsius and cook for another 20 minutes
- Let the pie cool for at least 1 hour at room temperature
- Put the pie in the fridge for at least 1 hour
