Broccoli soup

Method

  1. Cut the onion, celery and broccoli into chucks
  2. Heat the ghee in pan
  3. Lightly fry the onion and celery to release some flavour
  4. Add water, stock powder, broccoli, garlic and thyme
  5. Simmer for 10 minutes
  6. Remove bay leaves
  7. Transfer into blender and puree until smooth
  8. Add salt, pepper and/or splash of lemon juice to bring flavour
  9. For a creamier soup, add some milk or cream while blending
