Broccoli soup

Ingredients
- 1 tbsp Ghee
- 1 pcs Onion
- 1 pcs Celery stalk
- 2 pcs Garlic cloves
- 1 tsp Fresh thyme
- 500 gr Broccoli
- 1000 ml Water
- 4 tsp Stock powder
- 100 ml Milk
- 2 pcs Bay leaf
Method
- Cut the onion, celery and broccoli into chucks
- Heat the ghee in pan
- Lightly fry the onion and celery to release some flavour
- Add water, stock powder, broccoli, garlic and thyme
- Simmer for 10 minutes
- Remove bay leaves
- Transfer into blender and puree until smooth
- Add salt, pepper and/or splash of lemon juice to bring flavour
- For a creamier soup, add some milk or cream while blending
