Cauliflower-leek soup

Ingredients
- 0.5 pcs Cauliflower
- 1 pcs Leek
- 1 pinch Chilli powder
- 500 ml Water
- 0.5 pcs Lemon
- 1 tsp Thyme
- 1 tsp Sage
- 1 pcs Garlic cloves
- 1 pcs Onion
- 250 ml Milk
- 0.25 cups Almonds
- 2 pcs Spring onions
- 2 tsp Roasted pumpkin seeds
Method
- Chop and slice the veggies
- Soften the onion in olive oil for a few minutes
- Add the fresh herbs and let them infuse the oil
- Add the water, cauliflower and leek
- Cover the pot and let simmer for 20-30 minutes
- Blend the soup smooth, add some milk until it reaches the desired consistency
- Flavour the soup with lemon juice, salt and pepper
- Serve with topping of spring onions, almonds and pumpkin seeds
