Cauliflower-leek soup

Method

  1. Chop and slice the veggies
  2. Soften the onion in olive oil for a few minutes
  3. Add the fresh herbs and let them infuse the oil
  4. Add the water, cauliflower and leek
  5. Cover the pot and let simmer for 20-30 minutes
  6. Blend the soup smooth, add some milk until it reaches the desired consistency
  7. Flavour the soup with lemon juice, salt and pepper
  8. Serve with topping of spring onions, almonds and pumpkin seeds
