Method

  1. Melt chocolate, butter, salt and half the water au bain marie, and put aside
  2. In a separate bowl, combine egg yolks, sugar and other half of the water. Wisk it while heating it au bain marie. Wisk until it's nice and foamy and hot, but don't cook the egg!
  3. Combine egg and chocolate mixtures and wisk together.
  4. Cool to room temperature or cooler
  5. Whip the cream (cold as possible) until soft peaks stage
  6. Add half the whipped cream to the cooled chocolate and fold them together
  7. Add the other half and gently fold again
