Hot cross buns

Ingredients
- 0.75 cups Milk
- 7 gr Dry active yeast
- 1 tbsp Orange zest
- 1 tbsp Lemon zest
- 7 tbsp Butter
- 90 ml Sugar
- 1 pcs Egg
- 0.5 tsp Cardemon
- 0.5 tsp Nutmeg
- 0.75 tsp Cinnamon
- 0.5 tsp Salt
- 3.3 cups Bread flour
- 0.25 cups Water
Method
- Melt the butter
- Add all ingredients (except 0.3 cups of flour and the water) to bread-baking machine (dough mixing mode) and let it work the dough
- Feel free to put the dough in the fridge overnight, or let it rise for an hour (covered)
- Divide the dough into 16 equal pieces, shape them balls
- Let them rest for 20 minutes in a draft-free place (turned off oven with light on)
- Prepare the soft paste for making the crosses
- Put the paste into a piping bag and lay crosses over the buns
- Preheat the oven at 200 Celcius while the buns rise for another 20 minutes
- Brush the buns with some eggwhite or milk
- Bake the buns 15 minutes until golden brown
