Italiaanse quinoa

Ingredients
- 250 gr Quinoa
- 600 ml Tomato chunks
- 1 pcs Mozzarella
- 1 pcs Red bell pepper
- 1 pcs Onion
- 1 tbsp Fresh basil
- 1 tsp Oregano
- 0.5 tsp Salt
- 250 ml Water
Method
- Wash the quinoa
- Cook the quinoa in salted water for 10 minutes in a covered pot, low heat
- Turn off the heat, stir the quinoa and let it rest for another 10 minutes
- Pre-heat the oven at 200 degrees Celsius
- Cut the onion, garlic and pepper, lightly fry them with some olive oil
- Add the tomato chunks and oregano and cooked quinoa
- Flavour to taste with salt & pepper
- Ladle the mixture into an oven dish
- Slice up and divide the mozzarella on top
- Bake for 15-20 minutes, garnish with fresh basil
