Method

  1. Wash the quinoa
  2. Cook the quinoa in salted water for 10 minutes in a covered pot, low heat
  3. Turn off the heat, stir the quinoa and let it rest for another 10 minutes
  4. Pre-heat the oven at 200 degrees Celsius
  5. Cut the onion, garlic and pepper, lightly fry them with some olive oil
  6. Add the tomato chunks and oregano and cooked quinoa
  7. Flavour to taste with salt & pepper
  8. Ladle the mixture into an oven dish
  9. Slice up and divide the mozzarella on top
  10. Bake for 15-20 minutes, garnish with fresh basil
