Method

  1. Mix the egg/coffee mixture in a steel bowl and put on low heat and keep whisking (au Bain Marie if you’re scared).
  2. Keep whisking and cooking until you reach the "ribbon stage”. Let it cool by putting the bowl in cold water.
  3. Whip up the cream and sugar until fairly stiff. Now combine with the cooled mocha mixture.
  4. Poor into a serving cup and freeze overnight. Serve with a little whipped cream and cocoa powder
