Pizza dough

Ingredients
- 2 tsp Dried yeast
- 0.75 cups Luke-warm water
- 0.66 cups Bread flour
- 4 cups Bread flour
- .25 cups Rye flour
- 0.33 cups Olive oil
- 1 cups Water
Method
- Combine the yeast, the small amount of bread flour and the luke-warm water. Put in a warm spot for 30 minutes, after which it should be bubbly. (if not, the yeast was dead)
- Combine other flours and salt
- After the first 30 minute wait, add 1/4 of the flour and the water, mix well and set aside for another 30 minutes
- Add 2/3 of the remaining flour and mix well
- Add the olive oil and remaining flour, mix well
- Dust your working surface with flour and knead your dough for a couple minutes until nice and stretchy. Dough should be sticky like a post-it.
- Grease the inside of a bowl, put the dough in and cover with damp cloth or plastic wrap.
- Let rise for 120 minutes
- Divide dough into portions and shape into pizzas (or freeze the dough)
If you're going to use the dough directly, cover with sauce and toppings and bake at 250 degrees Celsius for 10-15 minutes
