Quinoa fried rice

Ingredients
- 180 gr Quinoa
- 130 gr Carrot
- 1 pcs Spring onion
- 140 gr Broccoli
- 60 gr Cashews
- 1 tbsp Maple syrup
- 1 tbsp Almond butter
- 1 tbsp Lime juice
- 2 tsp Sriracha
- 1 tbsp Sesame oil
Method
- Prepare the quinoa will in advance. Wash the quinoa and cook with a 1:1 ratio in water for 10 minutes on low heat with the lid on. Turn off the heat, fluff with fork and leave covered to steam for another 10 minutes. After it's cooled off, put it in the fridge.
- Combine the maple syrup, almond butter, lime juice and sriracha in a bowl. Feel free to play around with the ratios to achieve desired taste.
- Grate the carrot, slice the spring onion and cut the broccoli into bite-size chunks
- Heat sesame oil in a wok and fry the carrot and broccoli for a few minutes
- Add and quinoa
- Fry for another 4 minutes before adding the sauce and serving with spring onion and cashews
