Rice with kale and fried garlic

Method

  1. Wash the rice
  2. Cook the rice with equal parts water for 10 minutes on low heat. Turn off heat, fluff with fork and steam for another 10 minutes
  3. Finely cut the garlic
  4. Briefly fry the garlic in a generous amount of olive oil on medium heat until light golden colour
  5. Strain the garlic oil. Collect the oil separately and put the garlic crumbs on a paper towel to crisp up
  6. Take 1 tbsp of garlic oil and stir-fry the kale and hard pieces of paksoi
  7. Add the chilli and paksoi leaves and fry for another minute
  8. Bring to flavour with soy sauce, salt and pepper
  9. Serve with rice and crispy fried garlic
