Shakshuka

Ingredients
- 800 ml Tomato chunks
- 400 ml Coconut milk
- 6 pcs Egg
- 1 pcs Onion
- 1 pcs Red bell pepper
- 1 tsp Honey
- 2 pcs Garlic cloves
- 2 tsp Curry powder
- 1 tsp Paprika powder
- 1 tsp Ginger powder
- 1 pinch Cayenne
Method
- Glaze the onion in olive oil in a wide pot
- Add spice powders and fry for half a minute
- Add tomato chunks, coconut milk and honey
- Simmer for 20-25 minutes or until desired consistency is reached
- Flavour sauce with salt and pepper
- Crack the eggs whole in the pan and cover them with sauce to prevent the tops drying out
- Add the diced bell pepper
- Cover the pot and simmer for another 7-10 minutes
- Serve with rice or bread
