Method

  1. Glaze the onion in olive oil in a wide pot
  2. Add spice powders and fry for half a minute
  3. Add tomato chunks, coconut milk and honey
  4. Simmer for 20-25 minutes or until desired consistency is reached
  5. Flavour sauce with salt and pepper
  6. Crack the eggs whole in the pan and cover them with sauce to prevent the tops drying out
  7. Add the diced bell pepper
  8. Cover the pot and simmer for another 7-10 minutes
  9. Serve with rice or bread
