Spinach quiche

Method

  1. Preheat oven at 210 degrees Celsius
  2. Dice the onion and briefly fry, add the frozen spinach and stir on low heat until thawed
  3. Add the garlic, cream fraiche and flavour with nutmeg, pepper and salt
  4. Thaw the puff pastry and use them to line two small pie dishes
  5. Divide the spinach mixture over the pie dishes
  6. Cut the tomatoes and divide tomatoes and pine nuts over pie dishes
  7. Use a spoon to create a hole in the spinach mixture, crack an egg into the hole
  8. Add some cheese on top
  9. Bake for 15-20 minutes
