Thai cashew noodles

Ingredients
- 140 gr Soba noodles
- 3 pcs Spring onions
- 3 pcs Carrots
- 100 gr Sugar snaps
- 1 pcs Red onion
- 1 tbsp Sriracha sauce
- 2 tbsp Sweet soy sauce
- 1 tsp Rice vinegar
- 1 tbsp Ginger
- 3 pcs Garlic cloves
- 1 ml Ginger powder
- 2 tsp Sesame oil
- 0.5 cups Roasted cashews
- 1 tbsp Sesame seeds
Method
- Slice the ginger and garlic, then mash them in a mortar
- Add sriracha, vinegar, soy souces, chilli sauce and ginger powder to the mortar, mix well and set aside
- Fill a pot with water and bring it to a boil
- Meantime, cut the red union, beans and spring unions, diagonally makes for an interesting presentation
- Grate the carrot
- Place a wok on medium high heat
- Add the soba noodles to the boiling water, and cook for 4 minutes
- Fry the red union and carrot in some sesame oil
- With 1 minute noodle time left, add the sugar snap beans and sauce, stir well
- Drain noodles and add to the wok, together with cashews, stir well
- Sprinkle over some sesame seeds
