  1. Slice the ginger and garlic, then mash them in a mortar
  2. Add sriracha, vinegar, soy souces, chilli sauce and ginger powder to the mortar, mix well and set aside
  3. Fill a pot with water and bring it to a boil
  4. Meantime, cut the red union, beans and spring unions, diagonally makes for an interesting presentation
  5. Grate the carrot
  6. Place a wok on medium high heat
  7. Add the soba noodles to the boiling water, and cook for 4 minutes
  8. Fry the red union and carrot in some sesame oil
  9. With 1 minute noodle time left, add the sugar snap beans and sauce, stir well
  10. Drain noodles and add to the wok, together with cashews, stir well
  11. Sprinkle over some sesame seeds
