Method

  1. Cook the rice in broth or spices of your choosing
  2. Slice the cucumber and onion in half-rings and marinate in vinegar for a while
  3. Thinly slice the beans
  4. Prepare the satay sauce by combining the lime juice, honey, soy sauce, peanut butter and coconut milk.
  5. Heat a skillet with some coconut oil, add beans together with the eggs, frying and scrambling the eggs
  6. When the beans are tender, add the rice and satay sauce, mix well
  7. Serve in a bowl with pickles and some salad leafs on the side
