Veggie Satay rice

Ingredients
- 0.5 pcs Lime
- 1 tsp Honey
- 1 tbsp Soy sauce
- 3 tbsp Peanut butter
- 165 ml Coconut milk
- 1 cups Rice
- 1 cups Broth
- 1 pcs Red onion
- 200 gr Sugersnap beans
- 1 pcs Eggs
- 1 tbsp Coconut oil
- 1 pcs Cucumber
- 1 tbsp Red-wine vinegar
- 100 gr Mixed salad greens
Method
- Cook the rice in broth or spices of your choosing
- Slice the cucumber and onion in half-rings and marinate in vinegar for a while
- Thinly slice the beans
- Prepare the satay sauce by combining the lime juice, honey, soy sauce, peanut butter and coconut milk.
- Heat a skillet with some coconut oil, add beans together with the eggs, frying and scrambling the eggs
- When the beans are tender, add the rice and satay sauce, mix well
- Serve in a bowl with pickles and some salad leafs on the side
